Ken’s AP Table Relish
For Dumplings, Sandwiches, Stews, Sauces, Salads, and whatever else you can think of. Similar to Đồ Chua, but with some Gyoza ingredients added to it.
- Daiko Radish
- Carrot
- Ginger
- Garlic
- Green Onion
- Cabbage
- Fresno Peppers
- Habanero Peppers
- Splash of Maggi Liquid Seasoning
- Vinegar
- Salt
- Sugar
- Water
Relish is a melange of leftover fruits and/or vegetables, spices, and herbs that didn’t make it into whatever it was you were cooking. It’s whatever you have on hand. At the time, I was making Gyoza and Bánh mì inspired Carnitas:
Shred or dice your vegetables to your liking. Add vinegar, salt, sugar, and Maggi to your liking.
If used fresh, it does not need to be pasteurized. Pasteurizing destroys the crispness of the pickle, but maybe softness is what you desire. I leave that up to you. I like it softer, because I cook a lot for the elderly.
